Synopsis

It looks like meat, tastes like meat. Only it isn’t meat. Plant-based meat alternatives have become a big food trend globally. In India, too, companies like ETG Agro and Good Food Institute are exploring this category. However, a set of factors unique to India make it a challenge for them to get the dish right.

Take soya, yellow peas, and moong dal for protein. Add some oil — coconut, sunflower, or canola — for fat. Throw in minerals like iron, calcium, salt, and potassium chloride. Get some starch from foods like potato to work as binders. Add dextrose or yeast extract and some meat flavour.
